Death is really technical, probably the second most technical style of Metal, behind only Power Metal. And they don't really follow a song format. Extremely fast playing.
What you're describing is only one side of death metal. There's a lot of death metal out there (especially older bands) that are primitive, follow basic song structures in their songs and aren't all that fast. Check out Hellhammer, Master (US), Slaughter (Can) and Autopsy for some examples.

Black Metal relies mostly on its atmosphere rather than anything else. They don't play as fast as other types of Metal. They tend to have very long songs with little or no vocals. They have deep growling, but not as brutal as Death growling.
Although it isn't the most trendy style these days, there is a lot of really fast, brutal BM. Check out stuff like Blasphemy, Archgoat and old Beherit: brutal, fast, short songs with very deep growly vocals.

Just think Black Metal without growls, and you'll have Doom.
Ummm.... No.

Like Black Metal, Folk Metal originated in Norse countries like Norway and Denmark.
Skyclad is scandinavian? Wow, i didn't know that.

I like to call Thrash Metal "Mainstream Metal." Since this is easily the most commercial type of Metal, relying on repetitive passages and some rock elements, and with bands such as Metallica, Megadeth, and Slayer representing it. They're known for very fast playing, but they use tons of melody.
The most commercial type of metal? Maybe if you consider stuff like Metallica's black album and Gayswitch Engage as prime examples of thrash. Tons of melody? Go download some old Sodom and Kreator now!
