Rannveig Sif Sigudardottir (I think that's right lolz) in A Sailorman's Hymn by Kamelot

Those two sprung to mind immediately.

The female bits that pop out of nowhere in Abigor's Nachthymnen album are amazing, I could listen to the first 10 seconds of Scars in the Landscape of God for hours (well, almost).

Cathedral's The Garden also comes to mind; then again, there's nothing in that awesome suite that doesn't rule.

Ensiferum's Tears also deserves a mention. Great ballad, and a great way to finish such an excellent record.

The whole The Black Halo album by Kamelot has wonderful female interventions; apart from the obvious, I'd like to praise the awesome backing choirs in the title track's chorus (I adore that song).
III - Ways to Epica from their previous album also had some beautiful female chanting.

Siebenbürgen's Ibi Cubavit Lamia is an excellent folkish ballad with beautiful female vocals all the way through. Actually, this band consistently used female vocals on all their album, too bad their last two were really subpar (not just vocal-wise, the songwriting just wasn't there anymore).

I totally agree with Sharon den Adel in Farewell. Her voice is gorgeous in that song. I was about to suggest it and then saw it was already suggesed. Jeez, I was almost such a dick.
