I'd like to find some power metal since it can be fun but the only band I can sit through a whole album of that I've heard so far is Kamelot.

If you like Kamelot, then perhaps you could try Serenity or Pyramaze. The two first Masterplan albums are also great if you don't like the "flowery" bands out there. Then you have the more obvious ones like Helloween, Gamma Ray, Iced Earth, Blind Guardian, Grave Digger, Edguy...
