A lot of good suggestions already, but if you can sit through Dragonland's cover of "Neverending Story" with a straight face then you can probably stomach everything.

Helloween - Power (+ the ones already mentioned)

Gamma Ray - Heaven Can Wait (with Kai on vocals. Catchiest song ever!)

Twilightning - At the Forge

Stratovarius - Hunting High and Low, Eagleheart

Cage - Kill the Devil (not exactly as happy as the ones mentioned above, but this is one of those songs that will put a big, dumb grin on your face. This is also the song that sounds most like the 3 songs in the first post)

Breaking the Law has to be one of the catchiest, upbeat and down right enjoyable metal songs I've ever heard. Easily my favorite Priest song. (And yes, that's considering Painkiller and You've got another thing comin')

I'd say there's loads of happy hard rock but happy metal is a bit harder, apart from power metal. How about the title track and Rattlehead from Megadeth's KIMB...ABIG! The latter is about happy times at metal gigs and the former is about a dude whose business is going well. Both have "happy" sounding music, to my ears.

There's black metal that makes me happy when I listen to it, but I don't think that necessarily makes it "happy music".

I've been listening to Obtest's latest recently, which MA classes as "BM/Pagan", but on this one at least I don't reallly detect BM at all. (Maybe on their earlier stuff?)

Anyway, it's very cheerful sounding music
