When I lived in Spain, there was something my Da used to make called alley-olley, basically mayonnaise with garlic and some other stuff mixed in. Lovely, great with paella. People into paella here?


The real name is allioli, cause the original receipt is just all (garlic) and oli (olive oil) with a touch of salt. And better than with a paella, with fideuá (similar to paella but with litte noodles instead of rice).
And alioli is great too in barbacue meat, specially with lamb ribs.

To the original question, my answer is no, because I'm really fond of spanish (and french) cheeses, and with these, to put mayonnaise is just a crime :)


YES! That's it, spent a good portion of yesterday wondering if I'd made an idiot of myself with that spelling. :ph34r: Had fideua, but not as frequently, must admit.

Actually, it''s aioli and it comes from the south of France (Provence).

Here's the recipe:

    6 fresh garlic cloves
    1 large egg or 2 egg yolks
    1 1/4 cups extra virgin olive oil
    1 tablespoon fresh lemon juice
    Salt and pepper to taste

    - Place the garlic cloves in a food processor or blender and mince. (Or you can do it by hand.)
    - Add the egg and process briefly.
    - With the processor running on low, very slowly pour in half of the olive oil.
    - Add the lemon juice.
    - Gradually pour in the remaining olive oil and process just until the mixture thickens and emulsifies.
    - Transfer to a small bowl; add salt, pepper, and any other seasonings of choice. (Salt, pepper, and cayenne is excellent.)
    - Cover and chill well.

:D indeed. Must try that. Speaking of garlic, what do you guys like with garlic bread? Fresh salad, lots of o. oil, mmm. Allioli/aioli is nice too. All with a nice steak, oh boy.

Hah, maybe this should just become the MR food thread.

Well, traditional catalonian allioli don't have lemon neither (usually) egg.

If this is now the food thread I'd like to introduce you guys to something you probably haven't heard of before.

It's a Sardinian dessert - Seada - it's basically pecorino and a bit of lemon/orange zest wrapped in sweet pasta, then deep fried for a couple of seconds just so the cheese melts, and then it's usually bathed in glorious bittersweet honey. I find the whole thing delicious.

The only recipe I've found for it is in Italian - but if you translate it in bits I'm sure you could get the meaning out of it.

yeah, and the name is much more metal.

what about hot sauce? am i the only one who'll put it on just about everything? it's uber-manly but my white friends are all terrified, like it'll bite them or something (as opposed to growing hair on their chest, which is what it actually does... that and add a delicious twist to every dish!). fuck them. i love hot sauce, especially piri-piri and garlic-based sauces.

not to sound racist or anything, but 90% of the white people i know won't evne touch hot sauce. must be the culinary heritage i guess.

I absolutley love hot sauce. I'll put it on almost anything as well. The spicier the better. Actually last night I made Mexican food for my wife and I. We loaded the pico de gio with Habanero sauce. yummmmmmm.

...I hate the repercussions of spicy food though (usually comes the next morning), if you know what I mean.

I like spicy food, but I prefer curries and the like to mere hot sauce. And yes, the side-effects are sometimes :sad: with a bit of :blink: and a dollop of :wacko: .

I love curry, and it's not because that is my last name. Although, I do get a laugh when I go to a Thai or Indian restaurant.

Its pico de gallo (rooster's beak), and when its made with the allmighty habanero its called Xnipek, awesome with fish or seafood tacos, though the proper way of making it is not with sauce but with diced habaneros and sour orange instead of vinagre.

And yes hot saouce is awesome, mayo not so much.

I only like spicy when spicy doesn't overwhelm the flavor. When spiciness becomes a measure of goodness instead of a means to achieve it, it ruins the food for me.

Damn, I just love spicy food. Maybe because I'm of Indian decent and it's kinda in-my-blood thingy. Indian and Thai curries are probably the best I've ever had. And comments from Europeans and Americans I've met were that the food over here is much spicier and better compared to the Indian/Thai food over there.

Oh plus, I LOVE my mums mutton curry. Made my Chinese friends cry.

I KNOW!!! But since working here I can't help it. I have to work late everyday and the only food the company provides for dinner is McDonald's, Pizza, McDonald's and McDonald's. Jesus I'm fat.
