I've always enjoyed lots of bands that take influence from the genre, but for some reason I've never actually taken the time to explore proper post-rock bands. Can someone knowledgeable point me in the right direction?

Godspseed You! Black Emperor is, of course, amazing, but not by any means the most accessible/enjoyable post-rock band. I'd also recommend:

-Sigur Rós
-Explosions in the Sky
-Do Make Say Think

There are many others, but I'd consider the first two absolutely essential, while Do Make Say Think is just awesome.

Ah yes, I have all of Sigur Ros' albums, great stuff. Will check out the others you all have mentioned. Really really really digging Godspeed atm, will be hard to stop listening to this for a while heh.

I like the low key stuff like The Mercury Program, Souvaris and Tristeza a lot lately. It's chill and makes me calm and happy. Sigur Ros and GSYBE are really good too obviously.

I had this thing going for post-rock/shoegaze awhile back but I lost my playlist and I'm kinda too lazy to go through the abyss that is my music collection. Liam is a really good band, though. Check them out. Their album Journey Two Years and Fragment is great.

GY!BE, 65daysofstatic, Explosions In The Sky, Hammock, Mogwai, Red Sparowes, are the obvious ones that come to mind. Elsewhere, plenty of atmospheric sludge bands have large post-rock influences - late Isis and Pelican comes to mind, as does Mouth Of The Architect. There's also the Folky/film score types like Dirty Three, and other oddities worth listening to like Jesu and and Kayo Dot. If you don't mind Black Metally bits, check Alcest and Caina out as well.

Jesu rocks. Greymachine with Justin Broadrick is good too but I don't know if it counts as post-rock.

I'll second Zaddius on Red Sparowes.

Fucking second Mogwai. Great band. Maybeshewill are a post-rock band in the 65days mould, I suppose Crippled Black Phoenix are also vaguely post-rock and very good.

God is an Astronaut are also a good example of a straight ahead post-rock band.

God Is An Astronaut are great because they make music that sounds like it should be playing at the credits to some indie film, and even though it all sounds the same, it's still just some real good music.
